1 kg Mutton/chicken
1 kg Basmati rice
100 grm Yogurt
Salt to taste
1 medium onion
6 garlic clove
1 tbs ginger paste
8 small illaichi

1 tbs gralic paste
10 cloves
Oil or ghee
Kewra few drops
Yellow food color two pinch
Sugar a pinch

Add mutton, salt and garlic cloves in a pot with two glasses of water. If you're using chicken, you can do with only one glass of water.
Cook on a low flame till the meat is tender and the water dries.

Take one medium onion. Slice it and fry it in about 4-5 tablespoons of oil till its light brown. Add the rest of the spices, yogurt and fry it a little.

Simultaneously soak the rice in water for half an hour.
Boil the rice till they're half cooked,
drain the water and keep them aside.

Add the cooked meat to the sauted onions to make the masala and cook uncovered for a few minutes to evaporate excess water.
When most of the water has evaporated,
transfer a little rice to a pot, and on top of that add some of the meat/masala combo. Make layers of this. The way I usually do it is put half the rice in, add all the meat/masala then top that off with the rest of the rice.

Sprinkle on it a solution of kewra, yellow food color and pinch of suger.

Keep it covered and on a low flame.
Keep the pot tightly closed you're trying to steam cook the rice. When the rice is done, the biryani is ready.
Serve with salad or garlic chutney.

Chicken Rezala

* Chicken Breasts – 2 lb (1 kg), boneless, cut into 1.5 inch cubes
* Onion – 1 med, 1/2 of it thinly sliced
* Green Chili – 4, (2 sliced)
* Garlic cloves – 2-3
* Ginger root – 1/2 inch (to yield 1/2 tsp in paste)
* Ghee/ Clarified Butter – 4 tbsp
* Garam Masala Powder – 1.5 tsp
* Milk – 1/2 cup
* Plain yogurt – 1/2 cup
* Sugar – 2 tbsp (or to taste, the dish is meant to be on the sweet side)
* Black pepper – 1/2 tsp
* Salt – 1.5 tsp

* 1. Prepare the chicken by washing and patting them dry with a paper towel, before chopping them into cubes.
* 2. In a blender, blend 2 chilies, garlic, ginger and half of the unsliced onion into a puree.
* 3. In a sealable container, marinate the chicken pieces with the blended aromatics, garam masala powder, 1 tsp of salt, and 1/2 tsp of ground black pepper, for about 1/2 -1 hour. The longer you marinate the tender the meat gets, I did for about an hour.
* 4. In a bowl, beat the yogurt with the sugar and set aside.
* 5. In a heavy base non-stick pan, heat the ghee/butter. In batches, saute the chicken pieces until cooked through. Make sure your heat is not too high as it will brown up the chicken. Remove and let it rest on a plate.
* 6. Add the sliced half of the onion to the pan, and 1/2 tsp of the salt. Saute till translucent.
* 7. Add the yogurt mixture and simmer on med heat for 4-5 min. Return the chicken pieces to the pan along with the milk. When adding the milk, make sure to remove your pan from heat, and then once stirred in properly, return it on the heat. This will stop the milk from breaking.
* 8. Add the remaining 2 chilies. Simmer the chicken on low-med heat for about 25-30 min or until the milk evaporates and the ghee separates to create a thick shiny white gravy. Serve with Polao or Nutmeg Rice.

Peshawri Biryani

(recipe from my sister in law)
(serves 2-3)
Rice –
1 cup basmati rice
1 tsp ghee/ butter
1″ cinnamon, 3 cloves, 3 cardamoms
fried nuts/ onions (optional)
Beans –
1/2 cup beans of your choice (garbanzo, kidney, peas, moth etc.)
1/8 tsp turmeric
1/2 tsp red chilli powder
1 tsp ginger garlic paste
2 tomatoes, peeled and pureed
a handful each of cilantro and mint, washed and finely chopped
1/4 tsp good quality garam masala
salt to taste

Soak beans overnight. Drain and wash the next morning. (Sprout them in a colander if you wish to). Combine with enough water and cook on moderate heat until tender but able to hold their shape. (You can pressure cook beans as long as they don’t turn to mush). Reserve cooking liquid.

Heat oil in a pan. Add turmeric powder, red chilli powder and ginger garlic paste. Saute on low heat until combined. Next add herbs and saute until fragrant. Add puree and beans. Stir and cook on medium heat until thick. Season with salt and continue stirring until beans lose most of the moisture. Sprinkle garam masala and set aside.

Wash rice in 1-2 changes of water. Drain and set aside. In a sauce pan heat ghee and drop in the whole spices. Add rice, saute for a minute. Add 2 cups of cooking liquid and bring to a boil. Cover and cook on low heat until rice is done.

For serving spoon rice onto a large platter. Make a well in the centre and place beans. Garnish with fried nuts and serve with a raita.
